What's for Dinner?

this may be a stupid idea, or may have been done before, but I saw something like it on another forum. I want to take it one step further.

I know I'm always looking for new ideas for dinner, and maybe other people are too. So tell us what you ate for dinner tonight. Post up a recipe if you have a chance, so we can make it too.

Fried chicken? chicken parm? Some kind of chicken bites with broccoli and wheat rolls.

Chicken bites
Ingredients
1 boneless skinless chicken breast per person.
1 cup of crushed French's fried onion. (Them dried onion things.)
1/2 cup of grated parmesan cheese (like for spaghetti)
5 shakes of red pepper flakes (make sure you got the holey side)
Italian salad dressing
Any other spice you might use for chicken batter. I did four or so shakes of garlic powder and a few shakes of time.

Directions
cut up the chicken breast(s) into bite sized pieces.
Preheat oven to 350 degrees.
Mix together fried onion, parmesan, and spices in a Ziploc bag or bowl, whichever you prefer.
Coat the breast pieces in Italian salad dressing.
roll the pieces in the batter mixture until well coated. You can drop a few at a time into the bag, close it, and shake, if you're using the ziplock bag.
Once battered, place the pieces into a nine by thirteen inch baking dish.
Bake at 350 for about 25 minutes.
You should probably turn them over half-way through, but I didn't because I'm lazy. they were fine.

I just steamed the broccoli over the stove in a steamer basket and melted butter in a bowl, adding garlic to it.
the rolls came from the store.

Tonight I made baked chicken (marinated in way too much garlic because you
can never eat enough garlic, pepper, chicken herb seasoning that had rosemary
and things in it), plus asparagus and potatoes.

We had chicken bacon ranch wraps. Just chicken breast, some bacon, some salad dressing made from ranch salad dressing mix and tortillas.

Last night, I grilled some strip steaks.
I found this recipe about 4 years ago, and it's ridiculously good.
1 stick butter melted and separated. Meaning you scoop out the solids, Add one half cup corn oil to the butter, and dip steaks. Remove and shake off any excess butter. One teaspoon kosure salt and cracked black pepper to each side. Place on a grill high heat, I try for 450 500 degrees. Grill 2 and a half minutes per side to sier in juices and move off the flames for 3 to 5 minutes. Remove when the steak reaches your desired doneness. I'm a rare guy so usually 115 to 120, as beef will continue to cook internally for 5 to 10 minutes after removing. I've done this on tuna steaks and sword fish steaks, obviously with a lot less grill time as you only wish to sier these meats rather than continue cooking, and it's great. We pared it with a salad, and garlic bread, as well as lime potatoes.

I wonder how many Texans on here have eaten rattlesnake?
I know when I was in FL, we had the chance to try gator, done up as gator nuggets but I guess you can also buy grilled gator tail like a steak.

So nobody mentioned breakfast for dinner. I remember what a treat that was as a kid: waffles or pancakes for dinner.
So, has anyone tried the new southern delicacy of chicken and waffles? How do they do that? Mixed together with the chicken on top of the waffles, or have the fried chicken on the side, or what? And are the waffles sweet with syrup like breakfast, or are they different somehow?
I know some wrinkle their nose at the idea, I am merely curious.

Chicken and waffles is amazing. You have the fried chicken on the side and a
thing of syrup to go with it. Absolutely crazy sounding but it is delicious.

Chicken and waffles are the shit. I had that a couple weeks ago, actually.
And in general, breakfast for dinner is a great thing. I still do it from time to time, and I'm not a kid anymore.

I had lentil cakes and a seeded roll tonight. The lentil cakes were store-bought, but they were pretty good.

Hell, I'll eat breakfast for dinner, or dinner for breakfast. The way I see it, food is food, so eat what you want at any given time.

Hey, this topic is cool. I don't have any recipes for last night's meal, just toss tater tots and chicken nuggets in a 350-degree toaster oven for 20 minutes, and while that's cooking, put some frozen vegetables in a pan with a little water over the stove and let that simmer until hot. Yum. Fruit-flavored jello for dessert.
